Going back a few moons now but, always happy to revisit a personal old fave of mine. The Michelin’s had just been awarded across Dublin and Food & Wine wanted me to jet around to all the happy chefs and shoot them with a preferred ingredient. Young Dylan McGrath was busy in the now defunct Mint in Ranelagh when he was able to spare me 10 minutes before service. He latched onto some of Pat Whelan’s fine micro-herbs and was pretty exceptional in terms of what I politely asked of him. Just a couple of lights in the corner of the bijou dining room.
He’s been phenomenally busy and successful since his return and I’m always hearing fine, fine things form his multitudes of happy customers.
